Mystic Island YIHU Cabernet Franc Reserve 2019
Mystic Island Winery was founded in 2008 as a boutique winery that integrates humanities, arts, and ecology. The winery is located in a small valley in the core area of the Lotus Grape Wine Region on the Penglai Fairy Island in Yantai, Shandong Province, China. This region is known for its fertile soil and unique climate that is ideal for growing grapes. Penglai originated from the legend of "San Shen Shan" (Three Gods Mountain) on the sea, also known as "Penglai Fairy Island", a mysterious place. The founder of the winery named it "Mystic Island" after this mythical location.
This wine is made from 100% Cabernet Franc grapes from the Mystic Winery vineyard. Bright ruby red colour with rich red fruit and blueberry aromas, seasoned with toasted oak and spice. The body is well balanced with an elegant structure and ripe grainy tannins, intermingled with opulent fruit, balanced oak, and a long finish.
The Cabernet Franc is planted on a separate hill to the southeast of Mystic Winery. Only the best quality fruit was selected for the Reserve Cabernet Franc. The fruit was de-stemmed and carefully sorted before the berries were gently fed into the top of the fermentation tanks on the lower level of the winery. The must was then cold soaked to extract colour, tannin and flavour compounds from the skins. During fermentation, the juice was pumped over the skins to extract more colour and tannin while assisting the fermentation. Post fermentation the wine was drained from the tank and put into a mix of French oak barrels for approximately 8 months. While in oak the wine completed malolactic fermentation and remained on lees to give the wine additional weight and texture before blending.
